WHere is an easy version of a cocktail featured on our latest cocktail list. This is a large-volume prepared mix which is packed full of essence of the festive period, rendering it perfect for your festive gathering. Reserve the remaining citrus syrup for brunch beverages, sweets, or for another batch of the drink.

Serves 10 guests
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put the listed components inside a pan, bring to a gentle boil, mixing until the sugar dissolves. After that, turn off the stove and leave to cool entirely. Pour to a sterilised bottle, close it and store chilled, it will last for up to one month.
To make Batch Mix: Mix the specified spirits and syrup into one big jug, leave to sit for one hour, then strain best through a fine cloth, making it perfectly clear.
For serving: Add 85ml of the cocktail base into a cocktail shaker packed with ice, and agitate lightly for about 60 seconds until cold. Pour into an frosted cocktail glass or similar, decorate with the cranberries and complete it using a brief mist of mandarin oil above the glass.
